This recipe IS perfect for Summer! I might have to pick up some watermelon the next time I’m at the store. Balsamic Watermelon Salad is so so light ,refreshing and tastes Great... Watermelon is full of essential vitamins, Body minerals,anti inflammatory and a very powerful antioxidants..
Ingredients:
- 2 lbs of seedless watermelon cut into planks
- 1 medium red onion, thinly sliced
- 3 Tbls extra-virgin olive oil
- 1/2 cup balsamic vinegar (GOOD balsamic vinegar)
- 1/4 mint leaves, chiffonade
Instructions
- Combine olive oil and balsamic vinegar.
- Gently toss watermelon, red onion, mint and oil mixture together.
- Serve immediately.
